Pierre Ferrand Cognac Dinner

Pierre Ferrand, Sprigs Restaurant and Colonial Spirits are all teaming up to bring you a wonderful dinner perfectly paired with some of the best cognacs on the market! The first course will be seared rare tuna over mini naan bread and wakami seaweed salad served with Pierre Ferrand Pineau Des Charentes.  The second course will be bacon wrapped scallops with roasted pineapple sauce served with Pierre Ferrand Ambre.  The third course is seared foie greas with sweet and sour quince marmalade served with a cocktail featuring Pierre Ferrand 1840 Formula cognac.  The fourth course will be apple-wood smoked duck breast with a grilled orange fennel salad and Peking duck spring rolls served with Pierre Ferrand Cigare Blend.  The fifth and final course is a dessert of french toast and sauteed apples with candied pecans and maple ice cream.
